Spinach and Cheese Stuffed Chicken

Introduction

Ingredients

    5, 4oz chicken breasts, boneless
    20 cherry tomatoes
    1 medium onion
    10 oz fresh spinach (chopped into large pieces)
    1 cup Kraft mozzarella cheese (2%)
    1/4 cup Kraft shredded parmesan cheese
    1 tablespoon minced garlic, fresh

Directions

Preheat oven to 425'F

Get a skillet hot on a burner set to medium-high. Spray the skillet with olive oil spray. Saute the onion and garlic until almost cooked. Half the cherry tomatoes and put into the skillet with the onion and garlic. Cut the stems from the spinach and put into the skillet. Add oregano and basil.

Put a lid on the skillet and allow the spinach to cook down.

Drop the vegetables into a strainer to get out any excess tomato juice/seeds. Put in a bowl.

Mix the cheeses in with the vegetables.

Pound down the chicken breasts into 1/4" thick fillets.

Drop the vegetable/cheese mix evenly across all the chicken breasts. You may have some mix left over (this is where the calorie count may be over-counting calories, but I would rather account for them then not).

Wrap the edges of the chicken breast up and around the mixture. Secure with 2 or 3 toothpicks.

Set the wraps into a baking dish, toothpick side up.

Bake for 20 minutes until done.

Makes 5 servings: 1 serving = 1 4oz stuffed chicken breast.

NOTE:
This recipe is meant to be low in sodium by not adding salt or pepper. You may find that your tastes dictate salt and pepper being added. If so, please do not forget to recalculate your calories.
