Spicy Skillet Chicken, Rice & Beans

Number of Servings: 6

Ingredients

    1 tsp olive oil
    1 onion, finely chopped
    1/2 green bell pepper, finely chopped
    2 garlic cloves, minced
    2 tsp Creole Seasoning
    1 tsp chili powder
    1/2 tsp grd cumin
    1/3 cup long-grain white rice
    1 (14.5 oz) can stewed tomatoes
    1/2 cup water
    1 (12.5 oz) Chicken Breast packed in water
    1 can black beans, rinced and drained

Directions

Heat the oil in a medium nonstick skillett over med high heat. Add the onion, bell pepper and garlic, cook until softened.. about 8 mins. Add the creole seasoning, chili powder and cumin, cook 1 minute. Add rice, stir until the grains are coated.. 1 min.
Add the tomatoes, beans & water, bring to boil Reduce heat and simmer covered for 15 min.
Add chicken, continue to cook covered for additonal 5 mins.

Serving size (2/3 cup)... six servings.
