Aspargus with Low-Fat Bernaise Sauce

Introduction

While Bernaise sauce is usually high in fat, this version skips the egg yolks and butter, but offers the perfect flavor to complement fresh asparagus. Number of Servings: 4

Ingredients

    2 bunches (about 40 stalks) fresh asparagus
    1/2 cup plain low-fat yogurt
    6 Tbsp fat-free whipped salad dressing spread
    4 tsp chopped tarragon
    1 Tbsp lemon juice
    1/4 cup vegetable broth
    2 tbsp Dijon mustard
    salt and pepper to taste

Directions

Steam asparagus until tender-crisp, approximately 6-10 minutes.

Meanwhile, mix yogurt, salad dressing, tarragon, lemon juice, broth and mustard in a sauce pan. Add salt and pepper to taste.

Heat (do not boil) mixture on medium heat for 5 minutes or until warm.

Drizzle sauce over steamed asparagus and serve.
