Stuffed Dover Sole

Introduction

A terrific fish dish best served over a bed of brown rice. A terrific fish dish best served over a bed of brown rice.
Number of Servings: 4

Ingredients

    1 lb tilapia filets (or dover sole)
    1 bunch fresh spinach
    2 cloves of garlic, chopped
    1 large tomato, diced
    1 tbsp olive oil
    2 tbsp Parmesan cheese, grated
    2 cups mushrooms, pieces or slices

Directions

Saute spinach and mushrooms until cooked.
Add garlic in the last 2-3 minutes.
Roll a golf ball-sized amount of spinach mixture in each fillet.
Place in casserole dish and top with diced tomatoes and Parmesan cheese.
Bake at 350*F for 20-25 minutes (until fish is flaky).

    Great recipe! Also good with a little lemon juice and the mushrooms can be replaced with roasted eggplant (my bf won't eat mushrooms) - 3/14/07

  • Sounds good, but what is the oil for? I use olive oil spray to cook my mushrooms and spinach for my omelet in the mornings. Love the idea of putting them with my tilapia. Will try this week. - 11/8/11

  • sounds very easy, don't care for cooked spinach so I'll put it fresh in a salad. Love mushrooms, they might work well with eggplant. Might try with lemon instead of tomatoes, they seem to be in every dish. - 9/12/11
