Baked Potato Soup

Introduction

Very rich and creamy. Very rich and creamy.
Number of Servings: 8

Ingredients

    1 pkg. bacon bits (4.5 oz)
    3 cups cubed and peeled potatoes
    1 can (14.5 oz) chicken broth
    1 medium carrot, grated
    1/2 cup chopped onion
    1 Tbsp. dried parsley flakes
    1/2 tsp. each of celery seed, salt & pepper
    3 Tbsp. flour
    3 cups milk
    8 oz. Velveeta cheese, 2 %
    3 green onions, thinly sliced, optional

Directions

Add potatoes broth, carrot, onion, parsley, celery seed, salt & pepper to skillet. Cover and simmer until potatoes are tender, about 15 minutes. Combine flour and milk until smooth; add to soup. Bring to a boil; boil and stir for 2 minutes. Add cheese; stir until cheese is melted and the soup is heated through. Garnish with green onions if desired. Makes 8 1-cup servings (2 quarts.)
