Wheat Free Pancakes

Introduction

I've been eating a very low sugar diet and loving it. I haven't made these yet, but wanted to get the nutrition info. I replaced the 1 T. of sugar called for with Truvia and am assuming that one packet will do it. The original recipe also called for buttermilk, which I replaced with the almond milk. The recipe made no mention of the number of servings, so I'm just guessig. I'll update that part after I've made them! :) I've been eating a very low sugar diet and loving it. Ingredients

    1/3 c. quinoa flour
    1/3 c. cornmeal
    1/3 c. rolled oats
    1 packet Truvia
    1/2 tsp. salt
    1 1/2 tsp. baking powder
    3 T. canola oil
    1 c. Blue Diamond Almond Milk, unsweetened
    1 egg

Directions

Mix together dry ingredients. Add milk, egg and oil. Pour about 1/4 c. of batter onto prepared griddle. Turn cakes as soon as they are puffed and full of bubbles but before the bubbles break.
