Strawberry Cheesecake

Number of Servings: 6

Ingredients

    8 oz. cream cheese
    4 oz. half-and-half
    4 packets Splenda
    2 eggs
    2 t. vanilla extract
    1 cup strawberries, sliced
    1/2 cup sour cream

Directions

Preaheat oven to 350. In a blender or food processor, combine cream cheese, half-and-half, 3 packets of weetener, eggs and vanilla extract. Blend until completely smooth. Pour into an 8-inch ceramic or Pyrex pie pan. Bake for 25 minutes. Chill well. Garnish with sliced strawberries and sour cream (to which 1 packet sweetener is added). 3.4 grams of ECC, 4.0 grams of protein. Serves 6-8. Use a simple nut crust if desired, for an additional 3.8 grams ECC (see Mini Chocolate Chip Cheesecakes recipe for simple nut crust).
