Ingredients

3-4 medium potatoes (peeled and cubed)
1 medium onion
1/2 pkg of bacon
2 pieces of bread (toasted and grated into crumbs)
1 cup flour
1 egg
enough water to form dough
pinch of salt
1 Tbsp. butter or oil *optional*
Directions
Mix flour, salt, egg and enough water to form stiff dough. Take a small piece of dough and roll into s long strip about 6 inches long. Continue until all dough is used. Set aside.
In fry pan, cook bacon and onions until bacon is crisp and onions are transparent. When done, add toast crumbs to soak up extra drippings.
Fill a large pot with water and bring to a boil. Add potatoes. Bring back to boil and take dough strips and cut (with scissors) into cubes and drop into potato water. This makes little dumplings. Lower heat to a slow boil.
When potatoes are done, so are the dumplings. Strain potatoes and dumplings and replace into pot. Add bacon fry mixture. Toss all together. Add a tablespoon of butter or oil, if desired. Serve Hot.
