Spaghetti Squash Saute

Ingredients

2 Spaghetti Squash
3 TBLSP Olive Oil
1/4 cup Onion, chopped
2 cloves garlic, finely chopped
salt and pepper to tase
Directions
Servings: 12
1. Preheat oven to 350 F. Coat baking sheet with cooking spray, and place squash halves cut-side down on the sheet. Bake until squash is tender but still crunchy, about 40 minutes. Set aside to cool. (Variation of cooking: pierce shell with a fork. Microwave 10 minutes each pound. Cut in half and seed)
2. Once cool enought to handle, shred squash flesh from the rind using a fork. Set aside.
3. Heat Olive oil (can use butter) in a skillet over medium heat. Cook onion and garlic in Olive Oil until soft. Add squash to the skillet, and cook until hot. Season with salt and pepper
