Carrot Cake Muffin Cookies Low Fat/Carb

The name is strange, I know, but when you bite into one of these cookies its like a carrot cake muffin! They are so sweet and yummy and you will never miss the fatty version. Only 1 point for Weight Watchers as well! These are also dairy and egg free!

Number of Servings: 25

Ingredients

    1 1/4 cups whole wheat flour
    1 cup quick-cooking oat
    3/4 cup carrot, grated
    1-2 teaspoon cinnamon
    1 teaspoon baking soda
    1/2 cup unsweetened applesauce
    1/3 cup raisins
    1/4 cup artificial sweetener (you can use honey if you like, just adjust the points for it)
    1/4-1/3 cup water (if you dough is still too dry, just keep adding water one tablespoon at a time until it is stiff)

Directions

1. Mix all the dry ingredients together first.

2. Add in the carrots, applesauce, water, and raisins.

3. Spray cookie sheets with non stick, butter flavored cooking spray and drop by heaping teaspoonfuls onto the cookies sheets 1 1/2 inches apart from one another. Make sure to flatten the cookies slightly because they will not really "spread out" at all.

4. Bake at 275 degrees (yes, thats right -- 275!) for 18 minutes. DO NOT OVER BAKE.

5. Let rest for a minute or two on the sheets before removing. Store in an air tight container and enjoy!

NOTES : I added 1 c. grated carrot and more cinnamon and only 3-4 packets of sweetner.

  • i took the ingredients from the recipe using 1/3 cup of water and 2 tspns of cinammon and calculated by 25 servings. the calculator came up with carbs 10.1 g, calories 46.9, fat .4 g, cholestrol 0, sodium 85.7g, potassium 43.5g, fiber 1.5g, sugar 2.0g and protein 1.6 g. i can't wait to make it!! - 12/5/10

  • I can't see how these muffins could have 6.6 gr of net carbs with the flour, applesauce, raisins and carrots in them. The other muffins without those ingredients are higher in carbs. I think you may want to check the numbers again. - 1/29/10
