Left over Roast Beef stir fry

Introduction

I was wanting to do something different with some leftover roast beef and in looking at other recipes and making changes I came up with this winner. I will making this many times. I was wanting to do something different with some leftover roast beef and in looking at other recipes and making changes I came up with this winner. I will making this many times.
Number of Servings: 4

Ingredients

    Cooked roast beef-8 oz
    1 small onion
    2 cups carrots sliced thin
    3 Cups zucchini quartered, and sliced
    1 T. garlic
    2 Cups of raw celery.

    salt and pepper to taste.

Directions

In a skillet with olive oil or spray cook veggies until tender. Add Roast beef and cook veggies and done and beef is hot.. You can mix with cooked rice.

Serve over a bed of rice, or mix with cooked rice.
