Introduction

Delicious by itself, on baked potatoes or mixed into chilis or soups! Delicious by itself, on baked potatoes or mixed into chilis or soups!

Ingredients

    1.5 cups of black eyed peas, already soaked and boiled
    1/3 tin of canned sweet corn
    1 Red Bell Pepper, chopped
    1/4 red onion, chopped
    2 tbsp olive oil
    1-2 medium carrots, grated
    1-2 tbsp lemon juice
    1 garlic clove, crushed or chopped
    cilantro or basil to taste

Directions

Mix all ingredients together and enjoy!

Makes 4 large servings.
