Deb's Bacon, Swiss and Potato Omelette for 2

Ingredients

Egg, fresh, 1 large
Mushrooms, fresh, 2 large (finely chopped)
2 Green Onions, chopped
Spinach, fresh, 0.33 cup, stems removed
2 Egg whites
1 slice Sargento Light Swiss Cheese
2 slices Bacon
1/2 cup seasoned shredded Hash Browns
I used seasoned shredded potatoes (raw) such as Simply Potatoes or Bob Evans brand.
Directions
Microwave potatoes for 1 minute in small bowl. Cook bacon until crisp in microwave on plate covered with paper towel for 1 min. 30-1 min. 45 (depending upon microwave strength). Dice mushrooms and onion; pull stems off of fresh spinach leaves. Dice cooked bacon and cheese into small pieces.
On medium heat in a small skillet, sautee onions, mushrooms, spinach until tender. Add shredded potatoes and cook about another 2-3 minutes. Beat egg and whites together and add to skillet with vegetables. Cook until egg is set and then add cheese and bacon pieces along with a few shakes of salt/pepper to taste. Flip when egg is set enough to turn in one piece and cook for another 1-3 minutes on the other side. Plate up and enjoy with a piece of toast!
