Sweet Curry Tuna Salad

Introduction

Fresh and delicious! The egg whites and tuna make this a great low calorie source of protein. Fresh and delicious! The egg whites and tuna make this a great low calorie source of protein.
Number of Servings: 8

Ingredients

    Chicken of the Sea Solid White Tuna in Water, 2 cans drained
    Hard Boiled Egg, 1 large
    Hard Boiled Egg white, 2 serving
    Sweet Pickles, .5 cup, chopped
    Mayonnaise, Hellman's Light, 5 tbsp
    1/2 tsp curry powder
    pinch of salt

Directions

Hard boil eggs, then chop.
Chop sweet pickles.
Combine all ingredints and store in refrigerator. Makes a great sandwich, or serve with crackers.

I used light mayonnaise, but fat free would reduce the amount of calories. Feel free to remove the yolk from all three eggs if you want to remove even more calories. Also, if you don't have sweet pickles, pickle relish would work just fine.

  • I am definately making this again, but I tweaked it a bit by reducing the mayo, adding some sour cream, taking out the dried fruit (mostly because I don't have any). But this was a wonderful idea, i would never have come up with adding curry to tuna! - 7/24/12
