Number of Servings: 6

Ingredients

    * 1 slice white bread
    * 1 4 ounce package log-shaped goat cheese
    * 1 tablespoon olive oil
    * 1 cup chopped onion
    * 2 minced garlic cloves
    * 3 cups chopped plum tomatoes
    * 1/4 cup water
    * 2 teaspoons sugar
    * 1 teaspoon red pepper
    * 1 pound shrimp, peeled
    * 1/2 teaspoon salt
    * 6 cups cooked linguine (12 ounces uncooked)
    * 1/2 cup thinly sliced basil

Directions

1. Preheat oven to 400.
2. Pulse bread in food processor to fine crumbs. Spread on baking sheet and bake until golden, about 10 minutes. Transfer to plate and let cool.
3. Slice goat cheese into 6 rounds. Press each round into crumbs until coated. Bake at 400 for 10 minutes.
4. Meanwhile, heat oil in skillet over medium heat. Add onion and garlic and saute for 5 minutes. Stir in tomato, water, sugar and pepper and cook 15 minutes, stirring occasionally.
5. Add shrimp and salt, cook 4 more minutes or until shrimp are done.
6. Add cooked pasta and basil to tomato sauce, toss to combine.
7. Divide among 6 plates, top with goat cheese round.
