Wonderful Egg Scramble

Introduction

Number of Servings: 2

Ingredients

    2 large eggs
    4 egg whites
    1 handful of chopped onions
    8 ounces of mushrroms canned or fresh
    About 8 cherry tomatoes
    Salt
    Pepper
    Paprika
    Garlic Powder
    1/4 cup Fat Free Cheddar Cheese
    Pam (olive oil)
    dash of Skim Milk

Directions

This is a "breakfast" meal, but it's so good we usually have it for dinner.

First in a food chopper (or do it by hand) I add the onions, then tomatoes, then mushrooms- so that they are all finely chopped (drain all liquid).

Take a frying pan and spray with Pam (Olive Oil flavor) and add the mixture from above. I let them simmer for about 5 minutes.

In a seperate bowl I add the eggs and egg whites and a dash of skim milk. Beat eggs.

Add egg mixture to frying pan. I then mix all this together. I add a dash of sea salt, black pepper, garlic powder, and paprika. Cook until eggs are done.

Add cheese at the very end and mix until melted.

YUM!
