Rumbamel's Chipotle Pineapple SalsaSubmitted by: RUMBAMEL
IntroductionI got this original recipe from my Mother-in-Law's WW's book and left out a couple ingredients. It's hot and sweet! This is great served warm or cold. I got this original recipe from my Mother-in-Law's WW's book and left out a couple ingredients. It's hot and sweet! This is great served warm or cold.
-3 C drained Dole unsweetened pineapple tidbits
-1 1/2 c chopped onions (I use white)
-1 C canned lower sodium diced tomatoes
-2 cloves minced fresh garlic
-1/2 C unsweetened pineapple juice (from the canned pineapple above)
-2T brown sugar
-2 T apple cider vinegar
-2 chipotle chiles in adobo sauce, diced
-2T lime juice
--WHILE THE PINEAPPLE IS COOKING, measure your tomatoes in medium bowl and then mince your garlic and add it to the toms. When the pineapple is ready, add the tomato mix and stir. Cook about 1 minute, stirring occasionally.
--ALSO WHILE THE PINEAPPLE IS COOKING, mix the pineapple juice, brown sugar, diced chipotle chiles, and cider vinegar. This mix will be added after the tomato mix is done. Stir well and cook about 6 minutes, stirring occasionally.
--Turn heat off and add the salt and lime juice. Stir well.
--Makes about 4 C or 16 servings of 1/4 C each.
