Number of Servings: 20

Ingredients

    1.5 cup cubed wheat bread
    3.75 cup cubed white bread
    1 lb ground turkey sausage
    1 cup chopped onion
    0.75 cup chopped celery
    2.5 tsp sage
    1.5 tsp rosemary
    0.5 tsp thyme
1 Golden Delicious Apple, cored and diced
    0.75 cup dried cranberries
    1/3 cup minced fresh parsley
    0.75 cup chicken stock
4 Tbsp unsalted butter - melted

Directions

1. Preheat oven to 350 deg F. Spread bread cubes in a single layer on a baking sheet. Bake for 5-7 minutes until evenly toasted. Transfer bread cubes to a large bowl.

2. In a large skillet, cook sausage and onions over medium heat, stirring and breaking up lumps until evenly browned. Add celery, sage, rosemary, and thyme. Cook, stirring for 2 minutes to blend flavors.

3. Pour sausage mixture over bread in bowl. Mix in chopped apples, dried cranberries, and parsley. Drizzle with chicken stock and melted butter. Mix lightly.

4. Bake at 350 for 25 minutes.

Makes roughly 20 servings (served 12 at my Thanksgiving with lots leftover).
