Introduction

This is a high-protein, meal-sized baked potato that I eat as a full meal after a workout. I make them three at a time and store them in the fridge until I eat them. Ingredients

    3 baked potatoes
    1/2 cup 2% milk
    1 1/2 cup cooked broccoli
    1/2 cup grated parmesan cheese
    3 Yves Garden Vegetable Patties

Directions

0. Preheat oven to 350.

1. Sautee Yves Garden Vegetable patties until firm, while steaming broccoli.

2. Scoop flesh out of potatoes and into a bowl. Mash.

3. Crumble vegetable patties and finely chop broccoli. Add to potato mixture.

4. Add parmesan cheese and milk. Stir.

5. Scoop potato mixture back into potatoes and bake for twenty-five minutes.
