Tofu Scramble

Introduction

Taken from "Becoming Vegetarian". The basic tofu part of this recipe can really be put with any of your favorite veggies that would normally go in an egg omlet or scramble. Calories do not include cooking spray, and I like it with a lot more salt than is called for. Taken from "Becoming Vegetarian". Number of Servings: 4

Ingredients

    1 block tofu
    2T nutritional yeast
    1 red bell pepper, sliced
    button mushrooms (whole or sliced)
    cooking spray
    1/4 t salt, more to taste
    pepper to taste

Directions

Drain tofu. Mash with fork, then stir in tumeric and nutritional yeast and set aside. Saute mushroom and bell pepper together using cooking spray or olive oil spray until soft, then add the tofu mixture. Cook 3 minutes longer until tofu is heated through. Serve immediately. The full recipe makes 23 oz of food, and the calorie count assumes 4 servings.
