Chicken and Spinach Stuffed Mushrooms

Ingredients

10 Large Mushrooms with the stems removed (save stems)
2 Cups Fresh Spinach
1/4 cup Chopped Onions
4 Ounces Shredded Chicken Breast
1 Tbs. Italian herbs
1 tsp. Garlic Powder
1 tsp. Paprika
3 Dashes Black Pepper
2 Tbs. Olive Oil
1/2 Cup Parmesan Cheese, Grated
4 oz. Meunster Cheese, Shredded
Directions
Preheat oven to 350. in a large skillet, heat 1 Tbs olive Oil and saute Spinach until fully cooked. Remove from skillet into a large mixing bowl.
Chop stems from the Mushrooms and add them to the skillet with 1 Tbs Olive Oil, Chicken, Onions and seasonings. Cook until heated through and the onions are done. Add to mixing bowl with spinach and mix thoroughly.
Grab a muffin pan and spray with cooking spray, place a mushroom cap in each muffin cup. Spoon mixture into the mushroom caps and place in oven for 20 minutes. Sprinkle with the cheese and bake for another 5-10 minutes.
1 stuffed mushroom = 1 serving
