Ingredients

    1-1/2 lbs boneless, skinless chicken breast, cut into 1 inch cubes
    1 cup cashews
    3 stalks celery, cut into 1 inch cubes
    2 carrots, cut into 1/2 inch cubes, microwave 2 minutes
    1 onion, cut into 1 inch cubes
    oil for frying

    Seasoning:
    1/2 tsp salt
    1/2 tsp sugar
    1/2 tsp pepper
    1 T. sesame oil
    1 T. oil
    1 egg white

Directions

Yields: 4-6 Servings

Combine seasoning ingredients; marinate chicken with seasoning and refrigerate for 2 hours. Heat oil in a skillet and brown chicken. Remove chicken. Stir-fry vegetables until crisp tender; add chicken and cashews. Toss together.
