Tomato Basil Snack

Introduction

To ease your 3 pm tummy growls To ease your 3 pm tummy growls
Number of Servings: 4

Ingredients

    2 English muffins, split and toasted (I use whole wheat)
    2 TBSP fat-free mayonnaise
    3 plum tomatoes, cut into 1/4" slices
    6 fresh basil leaves, thinly sliced
    1/8 tsp pepper
    1/2 c shredded, part-skim mozzarella cheese

Directions

1. Toast English muffin halves and place on an ungreased baking sheet.
2. Spread the mayonnaise on each half. Top with tomatoes, basil, pepper and cheese.
3. Broil 4" from heat for 3-4 minutes or until cheese is melted.
