Cantonese Shoyu Chicken

Ingredients

    5 lbs chicken thighs, skinless
    1/4 cup soy sauce (shoyu), add more to taste
    1/2 cup brown sugar
    1-1/2 cups water (or enough to cover chicken)
    2 inch piece ginger, sliced
    3 cloves garlic, crushed
    2-3 stalks green onion, diced
    2 T. cornstarch mixed with 2 T. water

Directions

Yields 6 servings

In a large pot, add all ingredients (except green onion) and bring to a boil. Add green onion, cover, and simmer for 30 minutes. Remove chicken from the pot; arrange on a platter. Bring liquid to a boil and skim off fat. Add cornstarch mixture to sauce and cook, stirring briskly, until thickened. Pour over chicken and serve.
