2 eggs, beaten
1/4 cup turbinado sugar
1 tsp. vanilla extract
1 cup soy flour
1 cup rolled oats
1/2 cup lowfat dry milk
1 tsp. baking soda
1/2 cup blanched almonds
2 tbsp. Smart Balance oil
2 tbsp. butter
1 cup 1% lowfat milk
1 cup white chips
1/3 cup Craisins, soaked in boiling water
Boil water. Place Craisins in a Pyrex measuring sup and cover to the one cup line. Set aside.
Combine blanched almonds, butter and oil in food processor and process until smooth (almond butter)
Combine soy flour, dry milk, oats and baking soda, set aside.
Beat eggs. Add sugar and beat til fluffy. Add extract. Stir in dry ingredients and milk. When well-mixed, stir in chips and drained Craisins.
Bake at 350 degrees for 25 minutes. Cool. Cut into 12 bars.
