Herb Roasted Pork Loin

Ingredients

2 garlic cloves, minced (1 tablespoon)
1/2 teaspoon kosher salt
2 teaspoons olive oil
1 teaspoon dried rosemary, crumbled
1 teaspoon dried thyme
1/2 teaspoon freshly ground black pepper
1 (2 1/2-pound) center cut boneless pork loin
Directions
Preheat the oven to 350 degrees F.
Mash the garlic and kosher salt together with a knife to form a paste. Place in a small bowl and stir in the oil, herbs and freshly ground pepper. Slice 3 1-inch "pockets" on top of the meat. Push some of the paste into the slits. Rub the rest of the mixture all over the pork. Place the pork to a roasting pan, cover with foil, and roast for 1 1/4 hours or until the internal temperature reaches 155 degrees F. Remove the roast from the oven and let it rest for 15 minutes.
