Low-Fat Whole Wheat Pancakes

Ingredients

2 egg whites
1/3 cups all purpose flour
2/3 cups whole wheat flour
3/4 cup skim milk
1 tbs brown sugar (packed)
1/4 cup apple sauce
3 tsp baking powder
1/4 tsp salt
Directions
Mix all ingredients. Pre-heat griddle to 400*F and spray with non-stick cooking spray. Pour onto hot griddle using 1/4 cup measuring cup. When air bubbles pop, turn once.
Makes: 5 servings (1 serving=2 pancakes)
Freezes well too!

This recipe was great! I doubled the recipe. I used 1 3/4c white ww since I was out of ww, then 1/4c wheat germ and a T of ground flax. I used two whole eggs, added nutmeg, cinnamon, and vanilla. Instead of milk I used Kefir but used probably closer to 2 cups for a thinner batter. I got 20 pancakes. - 8/14/10

I used 1 ripe mashed banana because I didn't have apple sauce, and used almond milk. I also added 1tsp cinnamon and 1tsp of vanilla. Although the pancakes didn't come out very fluffy like regular pancakes, they were still thick and very moist. Had great flavour too. I will be making these again. - 6/8/11

I thought these were pretty good. It felt good using healthy ingredients. However, I didn't get 5 servings out of the batter by using the 1/4 cup as a measure for each pancake. Maybe could have used more liquid. If you end up with less servings, make sure you adjust the calories in your tracker! - 7/5/10

very fluffy. i could tell they would've had good texture if i han't used my homemade applesauce - too chunky, makes them seem undercooked when they're really not. i'm looking forward to trying this recipe with regular applesauce. mine was really good on top, though, with a dollop of yogurt. :) - 6/29/10

Delicious!! I had to add a little more liquid (milk and applesauce) to thin it out. I used whole wheat flour and plain soymilk. I also added a little cinnamon, nutmeg, vanilla, along with bananas, walnuts, and oats. SO yummy!! I cut the recipe in half and it made 6 small pancakes (1/3 c. each) - 2/24/10

Very tasty!! I doubled the recipe and substituted egg beaters for the whites, and while the batter was a bit thinner than I usually prefer, the pancakes were very tasty! I cooked up a fresh pear with come cinnamon to top, plus a little Smart Balance. Glad I have lots of leftovers for the week!! - 1/31/10
