Microwave Potato Chips

Ingredients

    2 Yukon Gold potato
    Olive Oil Spray
    salt
    pepper
    parchment paper
    mandolin or sharp knife

Directions

Cut a piece of parchment paper to fit the inside of your microwave. Slice1/3 of a potato into paper thin slices using a mandolin. If you cut the whole potato at once, the extras not cooking in the microwave will turn a pink color. Completely coat the parchment paper with olive oil spray and place the potato slices spaced in a single layer on paper. Spray the potato slices with olive oil and lightly sprinkle with salt and pepper.

Be sure to turn off the rotating option on your microwave and cook for 5-7 minutes.

Cooking times will vary depending on the cooking strength of your microwave. You may need to rotate the chips, as the chips on the outside didnít cook as quickly as the ones in the center. Repeat until youíve used both potatoes!
