Mindy's Vegetarian Crockpot Chili

Introduction

I also have made this with Ground Turkey instead of cashews. I normally also put garlic cloves and onion in it, but wanted to try it without. I basically put in whatever veggies I've got. Ingredients

    Kale
    Spinach
    Celery
    Carrots
    Broccoli
    Can of Tomato Soup
    Can of Stewed tomatoes
    2 fresh tomatoes
    1 packet of Old El Passo Chili Seasoning Mix
    1 Cup of Cashews

Directions

Soak the bean over night according to package instructions (I do not use the seasoning packet that comes with the beans). Rinse beans and throw in crockpot. Chop the veggies, rip the kale leaves from the stems, throw it all in with in the bag of spinach. (If it doesn't all fit then add the spinach bag after the kale has cooked down a little). Mix it up every now and then and cook on crockpot low setting. I do it overnight so lunch is ready for me to take to work by the morning.
