Boiled Salad Dressing

Introduction

Use on shreded Ice Berg Lettuce Use on shreded Ice Berg Lettuce
Number of Servings: 20

Ingredients

    1/2 cup sugar
    1-1/2 heaping teaspoons cornstarch
    1/2 teaspoon salt
    1/2 teaspoon dry mustard (must use dry)

    Mix together and add:

    1 lg. egg yolk plus 2 large egg whites, beaten
    Mix thoroughly with wire whisk

    Add to this:

    1 cup 1% milk
    Boil until thickened, stirring constantly with wire whisk.

    Let set on counter for about 45 minutes until it's cooled down a bit, then refrigerate until ready to use. Stir a few times, so a film doesn't form on top.

Directions

This recipe is cut in half. I am guessing on serving size, but I used about 3 tbs. on shredded up ice berg lettuce. This half the recipe, and it makes plenty with leftover.

It's VERY good!
