IntroductionMUFA: 1 cup chopped avocado - 1/4 cup of chopped avocado per serving MUFA: 1 cup chopped avocado - 1/4 cup of chopped avocado per serving
1 can (28 ounces) salt-free whole tomatoes
1 medium green bell pepper, seeded and chopped
1 Jalapeño, seeded and chopped (wear gloves when preparing dishes with Jalapeño peppers)
1 can (14 ounces) chili beans, rinsed and drain (Whole foods sells cans of chili beans with reduced sodium)
1/2 packge (12 ounces) fat-free soy crumbles
1 tablespoon Chili Powder
1/2 diced onion
1 tablespoon olive oil
Cover and cook on high setting for 4-6 hours or on medium setting for 8 hours, or until thick. Garnish each serving with 1/4 cup of the avocado.
