Refried Lentils

Introduction

A healthy twist on an old favorite A healthy twist on an old favorite
Number of Servings: 4

Ingredients

    Lentils, 2.25 cup or 1 19 oz can
    Black Olives, 113 grams or 1/2 cup sliced
    Onions, raw, 1 large
    Red Ripe Tomatoes, 1 medium whole (2-3/5" dia)
    Ground beef, lean, 2 oz or 1 cooked patty
    Jalapeno Peppers, 1 pepper (or to taste)

Directions

Another super easy recipe. Chop onion and tomato. Sautee until onion is soft. Add olives, chopped burger patty, chopped pepper and can of lentils. Simmer until liquid has reduced.

Spoon over multigrain tortilla chips and top with shredded cheddar cheese

  • Lentils are so easy to cook, I'd just start from scratch--or use leftover lentils from a dinner--to eliminate the sodium found in the canned product. The recipe doesn't say whether the shredded cheese is factored into the nutritional information--that could make a huge difference! - 6/22/12
