Vinaigrette Chicken with Whole Wheat Pasta

Introduction

Ingredients

    Chicken Breast- No Bone-No Skin (pounded if you wish)
    Light Vinaigrette (I like Balsamic, but light Italian is great too)
    Whole Wheat Pasta (or Brown Rice)

Directions

In a non-stick skillet, on MED/HIGH heat, brown chicken breast (I like to pound mine out a bit so it appears larger).

After both sides are browned, measure 2 TBS of light vinaigrette to pan and cover with lid on LOW until chicken is cooked through.

When chicken is cooked, remove lid and put chicken on HIGH for just a bit... the vinaigrette will thicken and caramelize on the chicken!

Pour chicken and sauce (the thickened vinaigrette) over Whole Wheat Spaghetti or Brown Rice!

Here are some "add in" ideas:
Add veggies like Tomatoes or Broccoli!
Cheese like Feta or Parmesan would be great too!
