Introduction

This was created with what I had on hand. The sodium and fat contents could easily be reduced using lower-sodium products and reduced-fat cheese. I think the leftovers will make a great burrito filling for lunches tomorrow. This was created with what I had on hand. Ingredients

    1 tsp olive oil
    1 c chopped onion
    2 cans black beans, drained and rinsed
    2 cans diced tomatoes with green chilies, drained
    1/2 c refried black beans
    1/2 tsp garlic powder
    1/4 tsp black pepper
    1 c shredded cheddar cheese
    1 T diced fresh cilantro leaves for garnish

Directions

Preheat oven to 400 degrees. Spray 8 x 8 baking dish with nonstick spray, set aside. Heat olive oil in skillet. Saute the onion until soft. Add beans, diced tomatoes, refried beans and spices, cook 5 minutes or until mixture is thoroughly hot and flavors are blended. Spoon into prepared pan and top with cheese. Bake uncovered until cheese is melted, approx. 5 minutes. Let rest for 5 minutes, top with cilantro and serve.
