12-15 baby carrots, chopped
4 stalks of celery, chopped
1 large yellow onion, coarsely chopped
8 satchels of reduced sodium chicken Oxo
4 cups of dry Catelli Healthy Harvest Yolk Free Broad Noodles
2 chicken breasts, cooked and cubed
12 cups water
Pepper to taste
Cube cooked chicken when cool enough to handle.
Chop celery, carrots and onion.
Combine chicken, celery, onion, carrots, Oxo and water in large soup pot.
Bring to a boil.
Reduce heat to low and simmer for approximately 2.5 hours.
Add noodles and continue to simmer for 20 minutes.
Add pepper to taste when serving.
Can serve with a toasted dinner roll with butter. (This is not calculated into the nutitional information.)
