Spicy Thai Soup with pineapple

Introduction

Number of Servings: 4

Ingredients

    2 medium stalks celery, thinly sliced
    2 medium carrots, thinly sliced
    1 large orange pepper thinly sliced
    1 TB olive oil
    28 oz. can crushed tomatoes
    8-10 oz. water
    salt and pepper to taste
    1-3 tsp red curry paste ( to desired spiciness)
    1 cup of canned crushed pineapple, slightly drained

Directions

Heat oil in a large stock pot. Add celery and cook 5 min. Add carrots and cook until just soft. Add orange pepper and saute 5 min. more. Add tomatoes, water, curry paste, salt and pepper, and cook until vegetables are to desired softness (I like my carrots a little more firm in this recipe).

To serve, top each bowl with 1/4 c. crushed pineapple
