White Bean Spread with Tuna (from Tosca Reno's eat clean diet cookbook)

Introduction

This is a yummy White Bean Spread with Tuna (from Tosca Reno's eat clean diet cookbook). I did not use the Vidalia (1 C chopped) onion, thus the sauteed onion in extra virgin (1 Tbsp) olive oil is not accounted for per her recipe. If you cook with onions, don't forget to add these two ingredients to your SP calorie. This is a yummy White Bean Spread with Tuna (from Tosca Reno's eat clean diet cookbook). Ingredients

    I can of GV pinto beans (you can use a white bean of your choice)
    1 Tsp of fresh dill weed
    2 cans of tuna packed in water, drained (I used two 5 oz cans)
    3 clove of garlic pressed through a garlic press
    2 Tbsp of lemon or lime juice
    2 Tbsp of chopped fresh parsley or cilantro
    Sea salt and fresh ground pepper to taste


Directions

1. If you opted to use Vidalia onion, then you will heat oil in small frying pan and saute onions until just translucent. Do not over brown. Transfer pan contents to food processor.
2. Heat up beans
3. Add remaining ingredients to the processor and pulse until blended for a chunky version or longer for smooth version.

Chill until ready to serve. You can serve on flat bread, in pita bread, or wraps.....your choice! The bread source is not accounted for in the recipe.
