Irish Onion Soup

Ingredients

1 TB butter
2 medium red onions, sliced
3 mediun yelow onions, sliced
4 shallots, sliced
2 garlic cloves, minced
2 bay leaves
1 TB dried basil
1 tsp dried tyme
1 TB packed brown sugar
3 cups beef stock or broth
1 12 oz. bottle of Guinness Stout Beer
Salt and pepper to taste
2 TB cornstarch (optional)
3 TB water (optional)
1c. shreadded swiss cheese
Directions
Melt butter in a large pot then add the onions, shallots, and garlic. Cook over medium heat until onions are soft but not browned. Add bay leaf, basil and tyme. Cook unitl spices start to smell (about 5 min. longer). Add beef stock, slat and pepper, beer. Bring to boil, then let simmer 25 to 30 min. until onions are cooked through.
Optional: to thicken the soup mix cornstarch and water together, then add to soup. Simmer until thickened.
To serve, put soup into oven safe bowls and add cheese (melt the cheese in the oven under broiler if desired).
