28 oz raw chicken breast, cubed 1 tbsp olive oil 4 tbsp garlic 36 oz 99% fat free chicken broth 1 tbsp italian seasoning 4 zucchini, chopped 3 tomaotoes, chopped 2 bell peppers, chopped 2 cups orzo pasta 12 oz steam in bag sweet peas 16 oz mushrooms, sliced 1 medium onion, chopped 1 tbsp red pepper flakes
Steam peas and set aside. Heat 1 tbsp oil in pan, add garlic, zucchini, bell peppers, mushrooms, and onion. Saute until soft. In another pan, heat 1 tbsp of oil, add chicken, red pepper, and salt and pepper to taste. Saute until chicken is cooked thoroughly. Add chicken broth and italian seasoning. Bring to a boil. Add orzo pasta and simmer for 8 minutes. Add tomatoes and peas to vegetable mixture. Add chicken and orzo mixture to vegetable mixture. Simmer until excess liquid cooks off. Makes 14 1-cup servings.
