Angie's 10 Minutes Tex-Mex Bean Salad

Introduction

Pleasing to the eye and the tummy =)
Cool, spicy, tangy and addicting.
Tip: Doing this for a picnic? DO NOT THAW THE CORN! It will thaw by the time you need it and help keep the salad cool!

Hint: If you can't find the canned "diced tomatoe & green chillies" simply substitute w/one tomatoe and another quarter of that jalapeno pepper.

Great to prepare the night before a picnic :)

Best part of this recipe is it's not an exact science. Eyeball it and play w/the vinegars! I prefer more cilantro & jalapeno for a more "Mex" and less "Tex" taste!

I love this recipe, I make something like it but add diced avocado and a little lime juice, skip the salt but replace with garlic salt, so good!! Eliminate the corn for a low carb version. Excellent and so refreshing. - 3/17/10

  • I personally add freshly minced jalapeno, for the one who wants to spice it up, but I'm glad you liked it! I figure this milder version would be more pleasing to the general public, since I'm a spice lover myself. - 6/17/10

  • Could be spicier -- will perk this up with hot peppers next time - 3/26/10
