Vegan Poor Man's Cake

Introduction

When I was growing up my Grandma would make Poor Man's Cake. Her recipe included shortening. I adjusted the recipe using Earth Balance to make it vegan.
This is not a healthy recipe. I make it for a special occasions.

Number of Servings: 16

Ingredients

    1 cup whole wheat flour (I use white whole wheat flour)
    1 cup white flour

    Raisins, 1.5 cup (not packed)
    Earth Balance Natural Buttery Spread, 1/4 cup
    Brown Sugar, 1.5 cup, packed
    Walnuts, .25 cup, chopped
    Water, tap, 2 cups
    Cinnamon 1 tsp.
    Nutmeg, ground, .5 tsp
    Salt, .5 tsp
    Cloves, ground, .5 tsp

    Baking Soda, 1.5 tsp
    Water, tap,1 t

Directions

Makes 16 slices.

1. In a saucepan, combine Earth Balance, raisins, nuts, cinnamon, nutmeg, cloves, brown sugar, salt and the 2 cups water. Bring to a boil and simmer for 10 minutes. Let cool for an hour.

2. Mix 1T water and the baking soda until the soda dissolves. Add it to the pan of liquid ingredients and stir.

3. In a large bowl combine flours and wet ingredients. Mix until just blended.

4. Pour batter into pan sprayed with Pam or other canola oil spray. I use a bread pan. You can use a square cake pan but the cooking time will vary.

5. Cook in a preheated 350 degree oven for 35-40 minutes or until a toothpick stuck into the cake comes out dry. Sometimes this cake takes a much longer time to cook than I think it should.
