Balsamic Arugula Chicken Salad

Ingredients

    3.5 ounces diced chicken
    Arugula leaf lettuce
    1 clove of garlic
    Red onion
    Salt & Pepper
    Balsamic Vinegar
    Melba toast

Directions

In a hot pan, saute garlic and red onion. Add chicken and cook throughly. Remove from stove and add cooked chicken on top of the Arugula. Crush the melba toast on top of salad and gently pour 2 tbsp of balsmic vinegar over salad and chicken. For those who want to mix it up add the zest from an orange to the chicken while it is cooking.
