Spinach and Sausage Mostaccioli

Introduction

My recipe uses ground elk Italian sausage - if you sub with another sausage, the fat/calories *might* be quite a bit more, though it'd be great with leftover ground beef, ground turkey or chicken, as well. My recipe uses ground elk Italian sausage - if you sub with another sausage, the fat/calories *might* be quite a bit more, though it'd be great with leftover ground beef, ground turkey or chicken, as well.

Ingredients

    16 oz. Mostaccioli Penne pasta
    12 oz. ground elk Italian Sausage
    2 cans Italian diced tomatoes
    1-2 cloves garlic, minced
    1 cup chopped onion
    1 can tomato sauce
    8 oz. frozen chopped Spinach
    Add additional Italian seasoning, basil, etc.- (as much as desired).

Directions

Cook pasta according to instructions; When done, rinse in cold water for about 10 seconds to stop the cooking process; drain and set aside.

After starting the pasta, break up & start browning sausage in a skillet like ground beef. [If you ARE using elk, you may need to add a bit of olive oil (not in counts), it just depends on how much fats your butcher added to the meat.]

Add the onion, spinach and garlic to the sausage & cook.

While the sausage mix is cooking, add the diced tomatoes and tomato sauce to the drained pasta, and stir.

Once cooked through, add the sausage mixture to the pasta, and mix thoroughly.

Top with a sprinkle of Parmesan cheese if desired, and serve.
