Shredded Pork Tacos

Ingredients

    1 tbsp canola oil
    1/2 cup chopped onion
    1 medium greed bell pepper, chopped
    1 clove garlic
    1 lb left over roasted pork loin, shredded
    1 pkg Lawry's Taco Seasoning
    8 corn tortillas

Directions

Heat oil over medium heat in a 12 inch skillet until shimmering. Saute onion and bell pepper until tender but not brown. Add garlic, cook for 1 minute. Add pork and cook until just warmed through, 5 - 7 minutes. Add taco season and stir to mix. Serve with warm corn tortillas and your favorite toppings. Makes 4 (2 taco) servings.
