Ingredients

    3 medium carrots, peeled
    1 medium cucumber, unpeeled
    2 tbsp light mayonnaise
    1 tbsp lime juice

Directions

Using a food processor, shred the carrots and cucumber. Mix all ingredients and serve.

Makes 4 servings (serving size 3/4 cup)
