Ingredients



    * Ham, regular (11% fat), .75 cup, diced
    * Eggland's Best Large Egg, 8 serving
    * Spinach, fresh, 2 cup
    * Onions, raw, .5 cup, chopped
    * Green Peppers (bell peppers), 1 cup, chopped
    * Olive Oil, Extra Virgin, 1 tbs

Directions

saute veggies in EVOO over med heat.turn off heat and add spinach leaves, stir until wilted. let cool. scoop veg mixture into muffin tin cups evenly.

gently beat eggs in separate bowl and pour into cups to fill. add your favorite cheese and bake at 350 for 20-30 min.
