My family's been making the recipe for four generations, and each generation tweaks it a little to make it healthier. It's easy to double, and a great dish to take for potluck. Ingredients

4 4oz boneless skinless chicken breasts
3 stalks celery, chopped
3 medium carrots, chopped
1 cup instant brown rice
1 pkg lipton onion soup mix (dry)
1- 1 1/2 cups water
Directions
1. Preheat oven to 350F.
2. Mix rice and dry onion soup mix in bottom of a 9x13 pan.
3. Lightly brown chicken in non-stick skillet. Salt and pepper to taste.
4. Place chicken over rice in 9x13 pan, and saute carrots and celery in skillet for about 3 minutes or just beginning to soften.
5. Put carrots and celery over chicken and rice, and pour water over everything.
6. Cover with tinfoil and bake one hour or until chicken is cooked through.
Makes 4 servings
