Peanut Butter Protein Balls

Introduction

This is a healthy snack that is good for you to start your day or curb hunger. This is a healthy snack that is good for you to start your day or curb hunger.
Number of Servings: 38

Ingredients

    3 C Quaker Old Fashioned Oatmeal (not instant)

    3/4 C powdered milk (I will increase protein powder by this amount if I donít have milk)

    1 C whole flax seed (not milled) -- OR 1/2 C wheat germ, (I typically donít use wheat germ, I do 1C of flax seed. Use Bobís Red Mill brand available in the health food section)

    1 C Whey protein powder

    1/2 - 1 C crushed Fiber One, Honey Bunches of Oats or favorite healthy cereal crushed.

    2 C peanut butter (I use Skippy Crunchy or Smooth, but any good peanut butter works fine)

    1C honey

    3/4 C mini chocolate morsels optional

Directions

Mix all dry ingredients, then add peanut butter and honey. It may take a few tries to get the consistency you prefer. It will be hard to stir, and sometimes I microwave on 50% power for 45 seconds to make easier to stir.

Once mixed thoroughly, form with hands and spoon into small balls. I line in a baking dish that can fit easily into refrigerator. Chill for one hour then separate into baggies. I freeze extras.

If there is any topping left in the bottom of the bowl, donít toss itÖ.it goes great as a topping on yogurt!!!
