Stuffed Peppers

Introduction

Simple stuffed peppers without the carbs. Simple stuffed peppers without the carbs.
Number of Servings: 8

Ingredients

    4 Large bell peppers (red, yellow and green)
    1 lb ground turkey
    1 oz crushed pork skins
    1 can diced tomatoes (low salt)
    1 tbs sweet basil
    1 tbs italian seasoning
    1 tsp season all
    dash of black pepper

    Makes 4 large servings (289 cals) or 8 regular (1/2 pepper)servings (145 cals)

Directions

Cut tops off peppers, wash and set aside.

Mix meat, pork skins and all seasonings together.
Divide into 4 parts
Stuff peppers
Top with diced tomatoes

Bake 30 - 40 minutes or until peppers are tender (start looking wrinkled).
