Ingredients

    Sweet Potatoes:
    3 cups mashed sweet potato (from about 2 medium potatoes
    )
    3 Eggs
    3 Tbsp Butter, melted
    2 Tbsp Honey
    4 Tbsp Molasses
    2 Tbsp Orange Juice Concentrate
    1 tsp Vanilla

    Topping:
    3/4 cup Quaker Oats
    1/2 cup Wheat Flour
    1/4 cup Orange Juice Concentrate
    4 Tbsp Honey
    2 Tbsp Molasses
    1 Tbsp Butter, melted
    1 tsp Vanilla

Directions

Slice your potatoes (about 2 medium) and boil until a fork inserts easily. Measure about 3 cups of mashed potato and mix it with eggs, honey, molasses, butter, and orange juice.
Grease an 11x7x2 baking dish and spread the potato mixture out on it.
Mix together the topping ingredients in order shown. Pour and spread evenly over the top of the potato mixture.
Bake for 25 minutes at 350, and then 10 minutes at 325, or until the edges are brown.
